So finally the West Indian food is here! LOL I had such a crazy day but was determined to get it in so you will see me rather flustered in the video but you will get the idea anyway! This stew is so out of this world and reminds me of the stews my Trinidadian grandmother, Nen, used to make. The woman was a genius in the kitchen and I think I inherited my love of cooking from her. She was a formidable woman, a bit scary if truth be told LOL But she baked fresh bread every day until she went in to a nursing home, had everything wrong with her (which she would regale me with every time we visited) but lived to the fabulous age of 93! She was also very generous, I never left hers without a loaf of freshly baked bread or something else she had found to give me to take home, and she gave me so much inspiration in my cooking that I’m quite sure I’ve some of her genes to thank for my ability to cook. My maternal grandmother was also a whizz in the kitchen and I’ll be sharing some of her recipes at a later date too. She was born in Panama, grew up in Dominica and eventually spent many years in Barbados with her husband and children, before finally coming to the UK and settling here for the rest of her life. Her influence in cooking is very important to me so I also use a lot of her tricks in recipes too!
